New York style cheesecake
Ingredients :
1 ½ cups sour cream
½ cup (355 g) whipping cream
1¾ cups refined sugar
1 kg of softened cream cheese
125 g butter softened without salt
1½ tablespoons cornmeal
30 ml of amaretto liqueur
1 Teaspoon vanilla extract
5 eggs
1 egg yolk
Method of preparation:
Before you start, make sure all ingredients are at room temperature. Place the oven rack in the center of the oven and preheat to 190 ° C. Wrap with aluminum foil the exterior of a removable mold of 23 cm. Grease the inside of the mold very well.
In a large bowl, beat the cream cheese and the butter until it is tender. Incorporate sugar and flour. Add the sour cream and the whipping cream. Add the vanilla and amaretto.
Incorporate the egg yolk, one at a time, mixing well after each addition.
Pour the mixture into the prepared pan. Place the mold inside another larger mold (at least 2.5 cm wider) with warm water to create a kind of Maria bath (this prevents cracking). Bake on center grill for 70 minutes.
Turn off the heat and let it cool in the oven with the door open for 1 hour. Remove the cake from the mold with water and cool for at least 3 hours before removing from the mold.
